I think if you can attach pics that would be really helpful to see the kind the work you have done.
A good welding table is usually very heavy & designed for strength. 1" square tubing for legs is very "lightweight" & is most likely flexing.

Using the alum should not be an issue, it will actually help pull the heat out and act as a hink sink of you need it. However most use steel due to splatter and durability the alum will mark easy....

I would also prefer to mig it as I used a cutting wheel to cut the thing open and it's a little rough, so mig would be a easier,
